Both are correct in certain circumstances. It will be very interesting is used to express something that will happen in the future. It must be interesting expresses something in the present.

“It must be interesting” is a conclusion the speaker has made after learning something about it. The speaker thinks it very likely is interesting in the present.
“It will be very interesting” is a prediction about the future. The speaker believes that it will be interesting when it happens in the future.

Either one works, but they have different meanings. One is future tense, and one is a present tense.
