Meat: I marinated meat and cooked it. Why does it taste bitter?

    What did you marinate it with?  Did you use too much acid?

    Maybe one of your marinade ingredients was past its best?.

    I'm imagining you put something bitter in it. Pith or seeds from lemon can do that, but marination doesn't tell me anything about what you marinaded it with. Pee? Bitter melon?
