It's for control. It doesn't have to do only for showing, but the nose is a sensitive area and with a massive animal like a bull, it's pretty essential to be able to control him. So a ring is fitted, for a rope to be attached when needed.

The practice is so the adult bull can be controlled. A leash attached to the nose ring allows the bull to be led around by the nose (thus the idiom) because if he tries to pull, it hurts. Since adult bulls can be over a ton in weight with a snotty attitude, there is a need to control them in the barn so people don't get killed.
