Why is it illegal to record conversations?

Because the other person did not give consent.
It is not illegal to record conversations. However in some states it is illegal to record conversations unless all members of the conversation are informed that they are being recorded. In other states only one member of the conversation must know the conversation is being recorded. Some states distinguish between electronic and in-person communication. For example, Oregon is a one-party consent state for electronic communication, but requires all-party consent for live in-person communication, with a few exceptions. Of course various countries have different laws when it comes to recording conversations.
It's about privacy laws. It is ALSO NOT CORRECT that all States forbid recording conversations. Some are one party States (one party to the conversation must be aware of the recording). Some are two party States (both parties must be aware). Some do not allow recording under any circumstances. AGAIN, it is NOT correct that all States do not allow recording.

It's illegal unless both parties consent to it.
The reason is that you might say things in private that you wouldn't say in public.
