Flexibility is the ability to be able to bend or change as necessary.

Karen had enough flexibility in her schedule that she could change shifts with someone else if it was required.

There was enough flexibility in the young tree sapling that the high winds did nothing more than bend it. Other, older trees less flexible had branches break completely off.

Physically, it means bendable- being able to touch your toes, for example. Otherwise, it means being able to change when the situation changes, or you need to go along with other people's ideas, or you need to change the way you do things. Some people, for example, can go to Spain and be perfectly ok with eating dinner at midnight. Other people freak out- they're not flexible enough to change their habits.
