Why "sun" in Phoenix Suns is plural? If the sun means "star at the center of the solar system", then it should be uncountable noun.?

But each player is a Phoenix Sun, hence the plural.

But it's not an uncountable noun. It's a countable noun. It's never an uncountable noun. Nowhere in English grammar is "sun" or even "Sun" used as an uncountable noun. It's not an uncountable noun because suns are, in fact, quite tangible and countable (e.g., The Sirius solar system is binary, meaning it has two suns, Sirius A and Sirius B.).
