How to make a charcuterie board with low histamine? ?

My friend is coming to spend the week with me and we love charcuterie boards and wine but she has to have a low histamine diet, so normally when we make the boards she is only able to eat one or two combinations off of them. She really likes what normally comes on these boards, dried/cured meats and cheeses but with things like salami, she'll have an allergic reaction if she eats more than a bite. So I'm looking for help coming up with a list of things that could normally go on a charcuterie board that are lower in histamine. Thanks!

    Used smoked meats instead of Aged meats.

    You could substitute smoked salmon or smoked black cod for the aged meats.   Or go to a good smokehouse and get a smoked chicken or turkey instead of the cured pork products like salami.  You can find some uncured meats in regular grocery stores like uncured bacon.  

    Fresh mozzarella and Swiss are low in histamine.  Any fresh cheese or cheese curds will be much lower in histamine than an aged cheese. 

    You could add some things like olives (which reduce histamine), artichokes, etc.
