You said it. Lethal weapon series.

I also liked die hard 3.

Predator 2 also. Danny Glover, Bill Paxton, and the two mexicans.

Also I liked martial law with Chad McQueen and Cynthia Rothrock.

Beverly hills cop as well honorable mention.

You probably hit the best pairing right on the head.  It was an excellent match up. Martin Riggs & Roger Murtaugh   (Lethal Weapon)

John Spartan & Lenina Huxley (Demolition Man)  was also good,   but my problem with that one, was that Sandra Bullock didnt have enough to do, and was reduced to basically comic stand in.   She was almost wasted in the film, and should have had better scenes.

You completely forgot Alex Murphy and Anne Lewis (Robocop)!

You also forgot about Dooley and Jerry Lee (K-9)!

And then there's Mike and Jeff (Men At Work, supporting characters).

And not to mention the Keystone Kops.

Simon Pegg and Nick Frost in Hot Fuzz.

Basil Rathbone and Nigel Bruce in a series of Sherlock Holmes films in the 1930s/40s.  (Yeah, they weren't cops.  The cops in Sherlock Holmes stories are always really stupid!  But their characters were great!)

(I guess you can see I'm not really big on cop movies.)
