What would happen if I had a cavity in a tooth that had an infection in it and my dentist filled it?

I know a dentist doesn’t fill a tooth if there’s infection there. But what I’d like to know is why? What would happen if it was filled anyway?

The infection would still grow and fester and eat at your gums and then eventually the rest of your mouth if it's not treated first.
