Is it safe to freeze opened hamburger meat after its been opened, and sat in the fridge for 2 days?

You can but the downside is that refreezing it will adversely affect the texture. When you do use it, and no matter how you cook it the meat will be mushy. It won't be as you would normally expect it to be.

I prefer to use Fresh ground beef, whether ground by the store or by myself. Leftover fresh ground beef, I will freeze, but only use in a casserole or some such-not in a hamburger as it loses some of its texture and can get a bit watery after thawing.
As to Can you do that? Yes, BUT, it depends on how the meat was store-has it started to turn brown and get an OFF smell yet?
