What gives the flesh of different animals different flavours?

    Mostly their different diets.

    Wild hog in Texas taste a lot different than wild hog in California.

    Our taste buds and sense of smell are what give us the sense of flavor. That is why people who lose their sense of smell (such as Covid-19 victims) cannot taste their food. The flesh of different animals have different chemicals that may break down as soon as they die. Fish for example gives off the distinctive fishy smell and taste because of the breakdown of TMAO into trimethylamine (TMA). TMA is what our nose detects as fishy smell. Fishy smell of course can make people vomit if it is strong enough. 

    We and other animals evolved different taste buds and smell receptors and our brains also treat the smelsl of different chemicals differently. For example, the same chemical that makes feces smell bad to us is also the chemical given off by decaying meat. We evolved to find that smell repugnant because decaying meat and sewage contain bacteria that can kill us by food poisoning. OTOH, dogs find the same smell attractive because they rely on badly decayed meat to avoid starvation if freshly killed prey is not available. That is why dogs will eat stool but we will flush it away. 

    Besides smell, texture is also very important. People generally find fatty foods to be more tasty and lean meat to be less delicious. That too is a result of how we adapted to food. Fatty food has more calories and is good for people when we were hunter/gatherers needing to find enough food to stay alive. It only became a problem when we have more food and calories than our body needs available to us.
