Yeah, definitely. Lard was the main type of cooking fat/oil people had back then all over the world.

Yes, of course. Anywhere that pigs or other animals were raised, the people used ALL parts of that animal. They couldn't just run to the grocery store and buy another lean pork loin- they had enough trouble finding enough food to survive. So of course they rendered out the pig fat, and used it in their cooking.
