Is strength training and walking enough to stay in shape, along with a healthy diet and sleep?

Depends on what you mean by "in shape" and "walking." Walking probably is not enough to maintain cardiovascular endurance, so over time, the person would lose some aerobic capacity. Of course, it also depends on whether you're talking about a 20minute stroll a couple times a week or and an hour of speed walking every day. Walking and weight lifting would definitely provide general health benefits and help maintain muscle mass and bone density. Neither will do much for weight management, but that's where the diet comes in.
