In the recent past, the 2020 election map showed Democrats having 223 seats in the House of Reps'. Then, it changed to 222. What happened?

Election maps are prepared by media outlets and they change often as more ballots are counted. Until all the elections are certified all the maps will be in a state of flux.

It really depends on how you count independents (like Bernie Sanders).

Which map?  Various news outlets and web sites have their own maps.

But I would imagine whichever source you are using had called a race for a Democrat, and then that turned out to be changed as more votes were counted.
