Dependent vs independent variable?

Objective:

To screen three LAB(Lactobacillus plantarum, Pediococcus acidilactici, and Pediococcus pentosaceus)for antimicrobial activity against the foodborne pathogens Listeria monocytogenes, Salmonella, and Escherichia coli.

What would be the independent and dependent variable in this study? what could be a control?

The independent variable would be the three 'friendly' microbes and the dependent would be groaf rates of the pathogens.  There could be all kinds of controls.  Normal growth of the microbes would be one.  Addition of pure lactic acid another.
