Francis John, wonderful irish guy that does content for a few games like rimworld, oxygen not included and factorio.  Really it depends on what sort of content you are looking for though.

I can't narrow it down to just one, so here are a few at the top of my list (which is 158 subscriptions long):  2 the Ranting Gryphon, Perifractic (Retro Recipes), Fluke Husky, Caffeine Fox, Dr. Becky, Ms. Mad Lemon, Crash Azarel, and Stormi Folf.  (I would include Jean-Baptiste Chandelier and Photonic Induction, but they don't seem to make videos any more.)
