Is Pisces the bipolar sign?
The stereotypes is Gemini is the bipolar sign. How can that be? They are two men together...that's a lot sex. Pisces is two fishes swimming in opposite directions

Neither Sign is bipolar.
Both Signs are Mutable Signs (as are Virgo and Sagittarius), and all Mutable Signs are adaptable and flexible, able to handle change well.
However, understand that the zodiac Signs are NOT in the same place as the Constellations. So don't try to read too much into the name of the Sign, or into the symbol for the Constellation.
Bipolar is most often seen when the individual's birth chart (which has 40 to 50 factors in it and specific to THAT person alone) has both Jupiter and Saturn strong in the chart and interacting badly (discordant aspects) with other planets in the birth chart,

They can be depending on the placements in their chart. Especially if those placements are gemini even sag

Astrology is made up magic. You are thinking about the constellations. Which has nothing to do with the signs and stereotyping. Sure.

No but you're on the right track. There are four mutable signs: Gemini, Virgo, Sagittarius, and Pisces. The old way of referring to these signs is bi-corporeal, or dual bodied: Gemini is the Twins, Sagittarius is half man and half horse, Pisces is two fishes. Virgo is usually represented by a woman holding wheat to symbolize fertility. It's one woman but two people when she's pregnant.
The idea behind these signs is all the same. They all occur at the change of seasons. Gemini is between spring and summer and we get some spring like days sometimes and some summer weather on others. Virgo bridges summer and autumn; Sagittarius Autumn and winter; Pisces winter and spring.
The signs therefore have a dual nature (not "split personality"). They are sometimes this way, sometimes that. Gemini might have spring and summer days, but never winter. Gemini and Virgo are both ruled by Mercury who is asexual. Sagittarius and Pisces are ruled by Jupiter who is Masculine. Mercury in Gemini is a silver tongued devil, quick witted and crafty, Skillful liars, too. Mercury in Virgo is analytical to the point of being persnickety. Jupiter in Sagittarius is noble, generous, intellectual. Jupiter in Pisces in expansive, freedom loving,
Bi-polar is, strictly speaking a dual nature, but it's an illness. A true bi-polar individual (everyone who has a good day on Monday and is down on Tuesday is not bipolar) has a severe mental condition that is controllable, not curable. This isn't the sort of dual nature astrology has in mind.
