Sushi Roll: how long can a spicy tuna cut roll be refrigerated before bad ish happens and I get sick and or die?


I plan to eat the roll later and got it from a restaurant to-go. Is 7 hours in the fridge risky?

    Sushi of any kind were never meant for storing for more than a day and even then you are still taking a chance because it is raw fish.

    The only time the germs in raw flesh is not multiplying and creating toxic waste is when it is frozen. This is why in Japan, sushi eateries make fresh sushi each day and for only that day and do not carry the leftover to the next day.
