Is it normal for either fresh bread from M & S bakery to contain soya, or a fancy, expensive cake bought in a cake shop to contain soya?

in general no, but you need to ask the folks down at the bakery to find out for sure. Depending on where you are and the rules there, most public bakeries need to disclose the ingredients or have a list of ingredients for each item they sell so if someone asks about a particular thing, like soy, they can tell you yes it is in there or no it isn't.

It depends on in what form the soy is
. Lecithin is a common ingredient and is from soy. Oils from soy are often used in baked goods. Soy milk can be used if a non dairy product is being made.
