why are homemade pizzas not greasy?

my pizzas are made with dough, cheese and sauce and are never greasy

    Because you don't add a lot of toppings that produce the grease.

    meats is what makes them greasy, so do certain cheeses.

    Pepperoni is greasy. The olive oil is greasy. if you use too much cheese, it's greasy.

    Much of it has to do with the ingredients and HEAT. Pizza ovens can be as much as 900 degrees. They will quickly cook off the oil in the meats and the olive oil used in preparation.

    The secret to that classic NY pizza that soaks a waxed paper plate in grease is getting it hot enough to make the oil in the cheese separate. Try it at home, microwave a slice of mozzarella.

    because they are more saucy i think so it appears not greasy. also a lot of homemade crust come out crunchy lol. u get paranoid its raw, and just by literally 10 extra seconds, the crust is crunchy. thats the main reason i think.

    Two things can make pizzas greasy: one is cooking them in copious amounts of oil, like restaurant deep-dish pizza is; the other is copious amounts of greasy toppings, like if you put as much peperoni on a peperoni pizza as, say, Pizza Hut does on its Peperoni Lovers.

    People who make homemade pizzas never put as many toppings on as restaurants do. And they can't because they won't cook properly in a conventional oven. Pizza restaurants specially equipped with expensive forced-air convection ovens that enable them to load the pizza with far more toppings and still be able to have the dough in the crust fully cook all the way through without burning because the super-heated forced air causes the water content in the toppings, especially in cheese and vegetables, to quickly evaporate off instead of sweating out and pooling onto the dough, leave the dough soggy and slow to cook, slow to cook because water requires a tremendous amount of heat to evaporate off. The water content in toppings-laden restaurant pizzas is far more than a conventional oven can evaporate off in time to have the dough, the cheese, and the toppings all cook properly and be done cooking simultaneously.

    So, because you can't use as many toppings, because you can't put a cup of beef, a cup of Italian sausage, a cup of pork sausage, 50 pieces of peperoni in no less than two layers, and three to four cups of mozzarella cheese on a single 14" pizza you stick into your oven at home and have all the water content evaporate off to enable the dough to fully cook before the cheese starts burning, you can't have a pizza as greasy as the grease that comes off of a cup of beef, a cup of Italian sausage, a cup of pork sausage, and in the neighborhood of 50 pieces of pepperoni in addition to the grease you use in the pan to cook the dough and keep it from sticking to the pan.

    But all that grease with all that bread, that's what makes pizza so delish, the intense combination of carbs and fat in restaurant pizza being such that a number of independent studies have indicated that it's actually addictive, the human body's and the human brain's physiological response to it has all the same unique markers that come from getting a fix from a drug one has become addicted to. But that's not a fix you can get from homemade pizza because you simply can't put as much greasy toppings and cheese on at home, not unless your home is equipped with a very expensive special kind of oven.

    Probably because you are using low moisture cheese and no pepperoni or sausage. The fatty meats add a lot of grease and some cheeses are greasier than others

    My cheese blend that I use is thinly sliced provolone topped with shredded mozzarella.
