If the way the world behaves depends on how, or even if we look at it, as per the double-slit experiment, what does "reality" even mean?

    It doesn't!  Observation in this context means an interaction rather than looking at something.

    If we touch, and hold, and grab, then this is reality.  If, on the other hand, we see or not see, detect or not detect, believe or not believe, just like the double-slit experiment of "wave-particle duality", then here your question would be logical: To be or not to be!

    Mathematics is the best quantitative description of the physical universe that we see -- that doesn't mean that the mathematics  describes reality itself .

    No one knows. There are many ‘reality’ interpretations of quantum mechanics - Copenhagen, pilot wave, transactional, many world, etc. All are consistent with mathematics and experiment but we cannot prove which is correct - if any of them.
