You take sweet butter and melt it then skim off the scum that forms on top and you have ghee or clarified butter.

Ghee is a term for Clarified butter essentially. Essentially from normal store bought butter, you heat at lower temp to "boil off" the water content from normal butter.
It's commonly found in other countries, but depending on what you're making, regular butter can often be a perfectly good substitute. Like if you're making Chicken Tikka that says use Ghee, just use regular butter (or even oil) and you'll be fine. You may want to up the amount of regular butter just a tad...
