Ask the food truck operator what his gross sales were for the evening, and give him 20% of that amount.

If you have a house party you should provide the food and drinks and have no need for a food truck to be there taking money from your guest.

If people pay for their own food, they're not really your guests.

you would have to ask the owner of the truck what he/she requires to have the truck at the party. no one else will know the answer.

As mentioned, if they come to your house party, you will be under contract and required to spend x amount of dollars. Generally, the host pays and the guest do not. If you did such an arrangement and the food truck accepted it, you'd be responsible for any amount raised less than the contract amount. Generally, if it's a private hire, tips are not required.

They will usually come with a contract that requires a certain payment. Tip as you see fit.
