Why does Panera leave baked goods out in the open air?

    Right now that is crazy due to Covid 19!

    Most breads and pastries need to be keep out like that otherwise they would get soggy, soft and loose the crispness needed.

    Because the fridge will introduce moisture and other stuff baked bread doesn't like.

    They're fresh and offered for sale. People like to see them and choose what they want. Whether they're in a glass case or on a countertop, they are always exposed to air.
