Buy some pork barbecue rub and rub into both sides. Sear at high heat both sides in a bit of olive oil then turn down the heat to medium low and turn often until done.

Season the chops and seal each side over a very high heat for a minute or so each side and then either turn the heat down, (and maybe cover with a sheet of foil, or something), and cook, turning now and again until they're done, (cut into the thickest part of one so that you can see when done), or place the pan into a medium oven until done after the chops have been sealed..

I like lemon pepper and grilled over a open fire but lightly floured and pan fried in a little evoo is pretty good too.

Pan fried with ONLY salt and a little pepper.

They are best oven cooked, but can also be shallow fried, provided they are not too thick. If frying them ensure they are well cooked through.
