While the Wii Version of Mario Kart is called Mario Kart Wii, how come the Wii U version is called Mario Kart 8, not Mario Kart Wii U?

    The naming convention was changed AFTER Mario Kart Wii to standardize things so it's not associated with the console, even at the expense of being a bit non-innovative.  The upside is that it makes porting LESS CONFUSING.

    The 3DS release was the first under the new convention, being Mario Kart 7.  The Wii U got Mario Kart 8.  The Switch only got a port of the Wii U version, being Mario Kart 8 Deluxe.
