It takes MANY people to build a house, before its ready for you to move into; and ALL those people are specialized. .

You've got the carpenters who build the house  frame; the roofer who lay the shingles on the roof; the plumbers who install the water pipes; the electricians who install the electrical lines in the wall and the electrical outlets; your City Water Department and the your electric supply company who install the water and electric  meters and actually turn on the water and the electric service and then inspect them to see that they're up to Code; and the guy who installs your air conditioning and heating system.

Don't forget the people who lay your carpet or your tile; or the "finishing" carpenters who install your kitchen cabinets and the tile on top of the kitchen cabinets, and hang the doors to the rooms and closets. I almost forgot about the guy who installs your dishwasher and your garbage disposer and connects them to the water pipe under the sink  and installs an electric switch so you and turn them on and off.

Depends on the skillset of the person or people building it, if it's multiple stories, and what equipment is being used (some equipment can take the place of one or more people).

A bare minimum of two unless it is a very simple house (lean too). If it has to be built to a code subcontractors might be needed. But an individual can learn how to wire and plumb to code.

In a survival situation one person can erect a "shelter" by themselves.

Keep in mind that a lot depends on how fast a person wants the house built. A crew of six can do the task a lot faster then a crew of two.

If you are asking about framing and foundation work, two men can do that. But then they need to hire subcontractors to do the plumbing, electrical work, and roofing.  It’s possible two men could build the entire house by themselves, but it would take longer because it’s uncommon that they would be very good at all of those specialties.
