Fantasy writers: Do you write every little detail about your world and characters down ?

Sometimes it's best to map out the world, make descriptions of peoples, areas, etc., before you start writing about it.

I don't see why that would be required.

I try to get as many details straight in my head as possible and I write a lot of it down during the research stage but when writing the story itself I only tell what is necessary to propel the story forward. Or in other words I know a whole lot more about the fictional world and the characters than I reveal to the reader.

As long as the readers have a general outline. It depends on the individual if you want to be detail specific.
