    Bread(maybe some kind of sourdough)

I would prefer mashed potatoes over almost anything else. Something bland--not spicy--not another vegetable and no other grains.

Stuffed peppers are a complete meal as is because you have your vegetable, meat, and rice. Garlic bread or another kind of bread would be a perfect accompaniment and maybe a little wine?

Rice or cous-cous to collect the pepper juices.

Pan fried noodles,  Potato cakes / rosti.

Rice and if needed a salad or cole slaw.

I would serve a tomato, fresh basil and mozzarella with some oil and fresh ground black pepper on the side. Or even a light tossed green salad. Garlic bread is fine, but you can mix it up a bit with fresh chopped garlic, butter, melted in the oven with a bit of cheese on top.

I like to have something fresh next to spicy items. Cottage cheese, tomato, avocado, etc.

    What are they stuffed with?

A rice dish comes to mind - and rice can be flavored in a zillion different ways to compliment what's in your peppers.
