When he went outside, the ground was covered in frost as far as (the eye / his eyes) could see.

    in this case, 'as far as the eye could see' is a stylistic phrase, so don't worry about whether he's seeing things, he's using both eyes, etc. It's like 'brings a tear to the eye' - we mean both eyes, but it's just an expression.
