What should I stuff peppers with? Don't want to use meat or beans.?

there will be other food so a protein source isn't required.

    You can stuff them with almost anything you want.  Even dressing for poultry--like you have at Thanksgiving. A mixture of dressing with squash--mashed and seasoned--would be good.

    Rice and cabbage would probably be my go to if meat wasn’t an option.

    Leftover rice --beat up an egg or three, cook til scrambled, mix in the rice, add green onion, and whatever other vegetables you like. Maybe some pre cooked kale would be nice to add as well?

    Rice and tomato. ...garlic and herbs too, have a little fun with it. Sounds terrible without the fat of meat which makes me want to say either deep fry the whole picture or with cooked rice and tomato inside, put the pepper on the far side of the bbq to give it a smokey flavor.
