what is 2 1/4 teaspoons of dry yeast to fresh yeast?

    the two most common yeast types available are Instant and Rapid rise.  

    "Fresh Yeast" used to be sold in cubes in the dairy case and I have not seen it in YEARS it is not reliable.  It may still be used in bakeries where they go through a lot of yeast but I am betting most bakeries use Instant yeast. 

    2 1/4 teaspoons of yeast is what is contained in 1 packet of yeast.

    The granular yeast that comes in flat packets or in jars *is* fresh yeast. 2 1/4 tsp. is what a packet contains.

    Is your yeast in form other than granular?
