Are all aircrew considered "aviators"?

Was looking at Air Force jobs and am interested in being a Special Missions Aviator, which is basically aircrew on a combat aircaft (They do aerial gunning + flight engineering). Am curious as to whether this job and other aircrew jobs are actually considered "aviators" within the aviation community. Most definitions state that an aviator is a pilot only. But are navigators, flight engineers, military weapon systems officers, etc considered aviators as well?

No, they're just considered aircrew despite what the military terms it. Pilots are aviators.

Aviators are pilots and pilots are aviators.  You will be a "flight officer" if an officer or aircrew if enlisted.
