What is something you can use to make mint leaves into a paste that isnt olive oil and can mix with water?

    Mint leave should be steeped, not ground to a paste. Cream is the only thing I can think of.

    Crush a lot of mint leaves in a Pestle & Mortar, until you get a paste.

    You could use simple syrup. Mix equal parts sugar and water and boil it until it is thickened.

    In my house that would be lime juice and white rum...and the water would be club soda.
