It's illegal to operate any vehicle above the speed limit

Generally speaking, it's illegal, but varies by local laws. Here in the United States, E-Bikes cannot exceed 20MPH on public roads. Even the ones that are capable of going faster will have the higher performance modes locked off unless you agree that you shall not use the high performance modes on public roads ("track use only"). If you want to go faster, the vehicle needs a different classification (i.e. motorcycle) and meet different regulations and licensing requirements and you'd need to check with you local motor vehicle department for specifics.

Sure would like to know which e-bike can hit 60 mph.  Until known, exceeding the posted speed limit is not relevant.

I would think its speed capability is not relevant. Just obey the posted speed limit

    Yes it is legal.

Print this out and show it to police. Anywhere in the world they will accept this response as a get out for speeders.

    https://www.onyxmotorbikes.com/pages/faqs

-- ONYX RCR is limited to a top speed of 20 mph and 750 watt to comply with federal electric bike regulations.

If that e-bike goes over 20 miles per hour it is illegal, and if caught it should be destroyed.

Federal law restricts all e bikes to 75 watts. That means that the onyx is not legal in the US. Most states restrict e bike speeds to either less than 20 or less than 30 mph

Why just because it's not a car? Don't be silly, the speed limit is for everything.
