What does it mean after someone says after a period of hanging out “I don’t know you that well!”?

    It means exactly what it says.

    After 'a period' of time, they still don't believe that they really know you very well.

     That they don't know you that well? to define knowing someone is not easy but i'd imagine you could define it as being able to guess how a person might react, what they might think or say in various situations. knowing a persons history or beliefs are usually pretty broad ways of knowing someone better as an example. If i know someone is religious or even christian i can guess or infer things about them. The closer my guesses are the better I "know" the person. 

     To connect the idea this person can't guess your thoughts or actions or beliefs enough to be comfortable giving a different answer. Advice? talk about yourself then, your beliefs, interests, values, history. It all helps even if its not everything.
