Should I be worried I gave the person my credit info at a very trusted shop?

When I walked in he said phone orders only so I called in and he asked for my card number exp and the the three digits on the back. Do they need the three digits on the back??

    They need the three digits on the back for phone and Internet payments (they don't for in-person payments).

    That is proof you have that card in your possession.  Yes, they need that.

    Yes they do. They can't process a transaction with the card not present unless they have those numbers.

     the charge will not go thru without it. More secure to use the card in person on a machine.

    Yes, the CVV number is an additional layer of security that the person giving the number has the card in their possession.
