How long should I cut gyoza wrapper?

I have the dough in logs currently(about 8 inches long), what is the right length to cut for individual gyoza wraps?

    Yes i do and I enjoy cutting them.

    Depends on how much filling you want in your dumplings (gyoza is the Japanese pronunciation of the Chinese word JIAO-ZI which is dumplings). You want the wrap to have enough edge to enclosed the filling securely and not open up when you cook them. You want at about 1/4 inch on the outer edge . If you don't understand, YouTube have several videos on how to do this.
