How would you go about testing whether yours is fresh enough to make cookies?

Baking powder and baking soda can lose their freshness and not work as well, even before the expiration date. How would you go about testing whether yours is fresh enough to make cookies?

    Put it in water and see if it fizzes.

    Soda doesn't 'lose freshness'. It's a mineral, doesn't spoil or go off. If you want to test it anyway, put a little bit of vinegar or lemon juice in warm water and then put some baking soda in. Baking powder can be tested by putting a spoonful in hot water. If either doesn't foam generously, it's too old.
