Why do northern crawfish taste nothing like southern crawfish?

Awhile back I ordered some crawfish in Wisconsin and it tasted nothing like what you get in Louisiana or Texas, why?

    probably were frozen.

Fresh seafood just isn't generally possible in northern states unless you go fishing and then you won't get crawfish anyway.

It probably has to do with whether they are fresh water or salt water, and the location they came from. Lobsters from Nova Scotia have a completely different taste than the ones from Maine.

The crawfish from Louisiana are wild-caught. What you were served may have been farm-raised. In my experience, farm-raised things such as trout, catfish or crawfish are rarely as good tasting as wild-caught.
