what fluids and maintenance does a 2001 toyota prius have or need?

The same as any other car with a combustion engine. In addition replace hybrid system coolant, replace hybrid transaxle fluid.

All that is clearly explained in the owner's manual. Your car has engine coolant, brake fluid and power steering fluid. The windshield washer fluid gets consumed often enough that you never need to flush that.

Its manual should have charts saying what the recommended maintenance intervals are. It will be a combination of miles and age. On older cars it’s never a bad idea to have a trusted mechanic inspect both with there electronic scan tool and visually.

Check the owner's manual.
