Why is it so hard for me to want to eat good unless it's put in front of me?

Not knowing you, we can only guess. Simply put I'd say you don't REALLY want to "eat good" so aren't motivated to prepare that type of food for yourself, but if someone else presents it to you, you'll eat that rather than turn it down and prepare something for yourself (because it's there and it's convenient).

From my viewpoint, this is a result of immaturity and lack of discipline.

Because cooking food takes time and healthy 90 percent of the time is food that has to be prepared and cooked. Junk food is available and just easy to make it's also not a hassle because there's really no measuring, preparing, or any careful consideration that needs to go into it. I feel that way sometimes too especially when i feel dead tired but i usually go for an apple or eat a little bit of ham something that's quick but not unhealthy.
