What do you think of dentist offices that have little small rooms instead of one big room ?

The office I go to is like that and I like it

I have never been to a general dentist with "one big room" and don't know of any general dental offices that are set up that way.

Orthodontic offices are often "open bay" where you can see the patient next to you. But the procedures being done are quite different than those that occur in general dentistry.

It's harder to hear the screams of agony from smaller rooms.
