Is this sentence correct?
She was taking my bath at 7 o'clock.

You probably mean:
She was having a bath at 7 o'clock. (British)
She was taking a bath at 7 o'clock. (USA)
"She was taking my bath" only makes sense if she was literally removing the bathtub from the bathroom and taking it away.

No. She would take her bath, not yours (my). It should be "her", not "my".
