just get it replaced. lots of systems run off of the coolant temperature sensor. if you bypass it then these other systems will not run properly and it will cause all kinds of other issues, possibly expensive ones. the cost of a new coolant temperature sensor is nothing compared to if you wear out your catalytic converter due to improper air/fuel mixture, or even just the cost of the fuel you will be wasting due to poor fuel economy

Modify the front end so the car can hold a V-6 or V-8 engine and tranny. Then buy an engine from the 1990 model years, you know the reliable years, and drop it it.

You do not bypass it.  You have to fix it if it is broken.  The sensor is needed for the temperature gauge in your dash to work so you can shut down the engine when it is overheating.  It is also needed by the engine computer to optimize fuel economy and for the engine to work properly.

Replace the sensor and see if it fixes the problem.  No luck, see a mechanic.
