Sport is both a countable and uncountable noun, so either is OK, although the second version suggests a variety of sports.

If you use it as an adjective, eg sports coach, sports car, sports bra, then it is normally with an -s.

There are only three sports, huntin' , shootin' , fishin'.

The rest are athletic past times.
