Not all Japanese families would expect the exact same criteria.

HIGH expectations? I suspect this question is from somebody who has never been to Japan, and knows absolutely nothing about Japanese people or Japanese society. Not to sound racist (although it will) but a Japanese boy marrying an American...is like an American boy marrying a Mexican.

Japan and South Korea and even China are much more "western" than most people realize. For a man from anywhere in that area to marry a girl from America...that young man is definitely "settling" and the family will have LOW expectations of the future wife. If they accept her at all, she's doing good...

Someone that is not scared of challenges and who can master their language or culture.

It depends upon the family and how traditional they are. Historically, it wouldn't have been something they would have approved, but in today's world, this might no longer be the case. You have asked a lot of questions concerning having anxiety: perhaps it might be useful for you to consult a licensed professional counselor to help you deal with this, including possible anti-anxiety medication. Good wishes,
