How do you make your cornbread? Do you use Jiffy mix or do you make it from scratch?

    I make cornbread and cornbread muffins from scratch using Albers Corn Meal and using the recipe on the box for both, so good!

    Jiffy of course. You only make it from scratch if you want absolutely no sweet notes in what you are making. I even use the mix when I include my onion and peppers in it to use in dressing (poke holes in the cornbread and pour in poultry stock, let it marinate overnight).

      Just add sugar or honey...  jiffy doesnt own sugar

    I do both it depends on what I happen to have on hand. 

    As to what I add to the cornbread...

    Minced jalapeno peppers

    Grated cheddar cheese some gets mixed in and some gets sprinkled on top

    Creamed corn

    Sometimes I will add a bit of sour cream or Greek Style yogurt

    I make my own cornbread from scratch and it is a winner everytime and my husband and friends love it. I use the following:

    1. One cup of whole wheat flour

    2. 3/4 cup of cornmeal

    3. one third cup of sugar

    4. One teaspoon of baking powder 

    5. Cup of milk

    6. One egg beaten

    7. One fourth of cooking oil

    Mix it altogether and put it in the oven at 425 for 30 minutes. Let cool 5 minutes and presto. Perfect cornbread. Also make sure your baking pan is well greased or use cooking spray

    I use Jiffy mix, and add chopped jalapeños, sharp, shredded cheddar cheese, and maybe some "Mexican" corn.

    I use both methods - just depends on time, try cooking it using a waffle maker for something different.
