English is a country right? Why when I search "list of counties" England, Scotland and Wales is not on it?
It just shows UK.

The kingdoms of England, Scotland, Northern Ireland (formerly the whole of Ireland), and the principality of Wales form the United Kingdom of Great Britain and Northern Ireland.

"English" is a language, England is one country on the island of Britain the others being Scotland and Wales and together with Northern Ireland makes up the UK.
No idea where you are looking up country lists or who produced them, however if it is American written, most Americans don't realise that England is any different to Britain or any different to the UK

English is a language that is spoken in many places including England. England is one of 3 countries in the United Kingdom which is England, Scotland, and Wales.
If your source does not list England as a country, then think of it as the Holy Trinity. God , Jesus, and the Holy Spirit are 3 and yet they are 1.

No, English is a language. England, Scotland, Wales and Northern Ireland are not sovereign independent countries that govern themselves, only the UK is, so you will only find the UK on any list of sovereign countries.
