Can you cheat your way onto a cruise forever/as long as you want by hiding under the bed when the ship docks and the passengers are released?
then go wherever you want on the ship after it's loaded again and takes off and find hobbies during each cruise?

Have you been on a cruise? There's not much room under the bed, and the room stewards sweep under there. Then even if you got away with it, you'd be discovered wherever you tried to sleep, and you wouldn't have a cruise card to pay for anything.

When you go on or off a cruise ship, it is recorded. It's easy for them to tell a passenger hasn't disembarked. The first thing they would do is check the cabin, which would include under the bed. As there is room for a standard suitcase under the beds, a person could also fit. I suspect that WHEN you were caught, you would be removed, and quite likely charged with trespassing. If, the search took a while, they could possibly charge you for any costs incurred by wasting their time looking for you.

Yes. They never vacuum under beds.
How will you have your ID/Access card logged out though? It records every passenger coming and going.

About 5 years ago we went to lunch on one at the dock as guests. We were ID-ed and photographed going in - we were logged onto the ship. And the same going out - we were logged out and photographed again. And that was the only way on or off the ship. Food wasn't all that great either.

No. At some ports in the U S ICE comes through. They will find you; if you are not first found by the rightful occupants of the cabin.
